Legendary chocolatier, Paul A. Young, shares his chocolate making secrets for the first time in his latest book, Adventures in Chocolate.
Paul A. Young is an English chocolatier and pattissier, who worked through the ranks in some of Yorkshire’s finest restaurants before being poached by Marco Pierre White. With a change in direction, Young then worked with Marks and Spencer and Sainsburys to develop some of today’s best selling products, and received two nominations for The Award of Excellence for his development work.
Young’s TV career has been marked by appearances on BBC2’s Food and Drink, ITV’s This Morning, Sky One’s Taste and the Carlton Food Network. He is a regular guest chef on UK-TV Food’s Great Food Live, and gives live demonstrations at various events, including Henrietta Green’s food lovers fairs, Covent Garden.
In June 2011, Young opened a new flagship chocolaterie in London’s Soho district. This new store, located on Wardour Street, is the largest of the three and features a basement kitchen which extends under two neighbouring shops.
