This month’s recipe comes from a new addition to Golborne Road – Redemption: London’s first alcohol-free bar movement. 

Redemption has enlisted the culinary expertise of Head Chef Jayne Totty, a nutritional therapist who specialises in producing raw food recipes. Using her expertise, Jayne has devised an innovative menu using local and organic produce where possible.

“I was looking for a disruptive, socially responsible idea, something that would challenge convention. An ex-boyfriend (who has a bad relationship with alcohol) wanted to meet up one evening in London somewhere without the temptation of booze. We couldn’t think of anywhere at all – from this, the idea of Redemption was born.” 

Redemption is committed to working with the local community and providing employment opportunities to people who really need them. 

Redemption is currently open five days a week (closed Mondays and Tuesdays), 4pm – 10pm, and can be found in Goldfinger Factory, a new furniture up-cycling social enterprise underneath Trellick Tower at 13-15 Golborne Road.

Spiced Cranberry Sour Recipe

At Redemption we provide sophisticated mocktails alongside the super-healthy food, so it feels like a proper night out whilst having a night off booze. Here is one we are working on for our winter menu. It’sa sophisticated ‘dry’ martini style mocktail that ticks all the winter flavour boxes: cranberry and citrus with a spicy kick. For a sweeter version switch the lemon juice for freshly squeezed seasonal clementine or satsuma juice.

What you will need
  • 4-6 cubes of ice
  • 3 parts cranberry juice
  • 1/2 part lemon juice
  • 1/2 teaspoon of freshly grated ginger 
  • A pinch of ground cinnamon 
  • A pinch of cracked black pepper
  • 1-2 drops of vanilla extract
  • A splash of soda water
  • A twist of lemon peel to garnish
How to make 

Put the ice cubes in a cocktail shaker (or similar sealed container) with the cranberry juice, lemon juice, grated ginger, cinnamon, black pepper and vanilla. Shake vigorously until chilled and frothy.

Strain into a martini glass and top with a splash of soda.

Garnish with a twist of lemon.
