This month, we feature a recipe submitted by one of our readers, Tracey Stephenson, who was the first to email us with the following recipe.

To make six individual pots.

For the topping
  • 1 apple (royal gala for sweetness)
  • the juice of 1 orange
  • 6 dates
  • 1 teaspoon of cinnamon
  • handful of raisin
For the base
  • 6 dates
  • ground almonds (about 3 tablespoons)
Cooking instructions

To make topping: soak the dates and raisins in enough water and cover for about an hour. Once the hour is up cut the apple into quarters, peel and grate into a mixing bowl. Add the cinnamon and the orange juice and mix together. Process the dates in a food processor until soft and sticky. Add the dates to the mixture and mix together and set aside. This can be done the night before and left in the fridge.

To make the base: process the dates till soft and smooth, put the dates into a mixing bowl and add the almonds till it forms a sticky ball.

Now you are ready to start assembling. Take enough of the base mixture to cover the bottom of your container, add some raisins to cover the base and add the apple mixture to cover the raisins. These can also be frozen. For a little extra goodness you can add some toasted oats for a crumble topping.
