Get a large pan or wok on a medium heat. Add oil and butter then add half a finely chopped onion, garlic, salt and pepper. Then add the chicken and seal the meat.
Add the chilli and chilli powder and stir for 3 to 4 minutes. Coarsely chop the spring onion, bell peppers, cabbage and the remaining onion and add to the wok.
Stir-fry for around 1 minute continuously stirring the contents of the wok.
Then turn the heat up a little, and add ó cup of water, stirring continuously for about 2 to 3 minutes until the vegetables become al denté.
Then add the noodles (fresh noodles or dried). Add ó a cup of water and stir continuously.
Make the sweet & sour dipping sauce by combining all the ingredients in a bowl and whisking until thickened.
Serve and enjoy this quick and easy meal!
Remove meat for vegetarian option.
